Our team has been making use of the Docker containers provided with a number of the solutions (in particular, the VirusTotal DXL Service), and we want to simplify bringing all of our services online after an event like a restart.
Is there a specific setting in any of the OpenDXL solutions that would let us automatically start something like the Docker container for the above VirusTotal service when the system boots?

The ability to restart Docker containers is a feature of Docker itself, not anything OpenDXL related. The following page discusses the various options that can be used when instantiating a container:

As an example, the following command could be used to instantiate a VirusTotal container that would always restart:
docker run -d –-name dxlvtapiservice --restart always -v /home/myuser/dxlvtapiservice-config:/opt/dxlvtapiservice-config opendxl/opendxl-virustotal-service-python

Additionally you can configure the services on the system to start the start the Docker daemon on system boot. Which, once started, would adhere to the restart policy you have configured using the link in chrissmith's post above.
